  1. In a large skillet, heat 2 tablespoons of oil over medium heat.
  2. Add the chopped onion and minced garlic; sauté for about 1 minute until fragrant.
  3. Add the shredded chicken, 2/3 cup chicken broth, 1/4 oz can of finely chopped mild green chilies, 1/3 cup raisins, 1 teaspoon salt, 1/2 teaspoon ground coriander, 1/4 teaspoon ground cumin, and 1/8 teaspoon pepper.
  4. Stir well to combine all ingredients and simmer for 5 minutes.
  5. In a small bowl, dissolve 1 tablespoon cornstarch in 1 tablespoon water.
  6. Gradually stir the cornstarch mixture into the skillet to thicken the sauce.
  7. Cook until the mixture is thick and bubbly, then remove from heat.
  8. Heat 1/8 inch of oil in a separate large skillet over medium heat.
  9. Separate the frozen tortillas and sauté them one at a time in the hot oil for a few seconds on each side until limp but not crisp.
  10. Drain the softened tortillas on paper towels.
  11. Place about 2 heaping tablespoons of the chicken mixture across the center of each tortilla, keeping the filling 1 inch from the edges.
  12. Roll the tortilla tightly around the filling to form a cylinder.
  13. Place two or three rolled flautas, seam side down, into the hot oil.
  14. Fry for about 30 seconds, turning to ensure all sides are crisp and golden brown.
  15. Remove flautas and drain on paper towels.
  16. Repeat with remaining tortillas and filling.
  17. Serve immediately with sour cream, salsa, or your favorite toppings.
