Directions
-
Mix 1/2 cup of the flour, the salt and the pepper together.
-
Pound the mixture into both sides of the meat with the edge of a heavy plate or mallet.
-
Cut the meat into serving-size pieces.
-
Beat the eggs together with the cream.
-
Heat the oil in a heavy iron skillet over moderately high heat.
-
Coat the meat in the flour mixture, then dip in the egg wash, and finally coat with saltine cracker crumbs.
-
Fry the coated steaks in the hot oil until golden brown on both sides, about 3-4 minutes per side.
-
Remove steaks from the skillet and keep warm.
-
Pour off all but 2 tablespoons of the cooking oil.
-
Add the remaining flour to the skillet and cook, stirring, for 1 minute to make a roux.
-
Slowly whisk in the chicken stock and cream, scraping up any browned bits from the bottom of the pan.
-
Simmer the gravy until thickened, about 5 minutes, stirring constantly.
-
Season with salt and pepper to taste.
-
Serve the steaks topped with the hot gravy and sliced onions.
