Description

Chicken Kurma is a beloved Indian dish known for its luxurious texture and complex flavor profile. Unlike spicy vindaloos, this curry relies on a paste of toasted whole spices, ground nuts, and yogurt to create a velvety, mild sauce that clings beautifully to tender chicken pieces. The combination of cardamom, cinnamon, and cloves provides a warm, fragrant backbone, while cashews and poppy seeds add a subtle nuttiness and creaminess. It is an elegant yet comforting meal, perfect for family dinners or special occasions. Serve it hot with steamed basmati rice or warm naan bread to soak up every drop of the flavorful sauce.

Ingredients

Directions

  1. Peel the garlic cloves and peel the ginger cube.
  2. Grind cloves, cardamom pods, cinnamon stick, coriander seeds, cumin seeds, and turmeric together in a spice mill or blender until you have a fine powder.
  3. Blend the garlic and ginger into a smooth paste.
  4. In a large bowl, combine the spice powder, ginger-garlic paste, yogurt, and salt to taste.
  5. Add the chicken pieces to the yogurt mixture, ensuring they are well coated, and marinate in the refrigerator for 2 to 3 hours.
  6. Grind poppy seeds, cashews, blanched almonds, and unsweetened shredded coconut in a blender or food processor until you have a fine, smooth paste or powder. Set aside.
  7. Heat ghee in a large skillet or heavy-bottomed pot over medium heat.
  8. Add finely chopped onions and cook, stirring occasionally, until they are golden brown and caramelized.
  9. Add the nut and coconut mixture to the onions and stir well, cooking for another minute to toast the flavors.
  10. Transfer the marinated chicken and all the marinade into the pot with the onion mixture.
  11. Add the minced fresh green chiles, half of the chopped cilantro, and 1 1/2 cups of water. Stir to combine.
  12. Bring the mixture to a simmer, then cover and cook on low heat until the chicken is tender and the sauce has thickened, about 30-40 minutes.
  13. Garnish with the remaining chopped cilantro before serving.
