Description

This traditional Chicken Mole is a celebration of deep, layered flavors, combining earthy dried chiles, aromatic spices, and rich cocoa. The sauce is thick, glossy, and incredibly complex, offering a perfect balance of savory, slightly sweet, and subtle heat. Tender chicken pieces simmer in this robust sauce, absorbing every nuanced note of cinnamon, cloves, and toasted almonds. It is a dish that feels both comforting and celebratory, making it ideal for family gatherings or special dinners. While the ingredient list may seem long, the result is a deeply satisfying meal that showcases the heart of Mexican cuisine. Serve it warm with fresh tortillas, fluffy rice, or beans for a complete and hearty experience.

Ingredients

Directions

  1. Heat the oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat.
  2. Pat the chicken pieces dry and brown them on all sides until golden, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add the diced onion and minced garlic, cooking until softened and fragrant.
  4. Add the canned tomatoes, epazote or oregano, dried chiles (pasilla, guajillo, mulata), ground cloves, cocoa powder, cinnamon, and shelled almonds to the skillet.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Return the browned chicken to the skillet, cover, reduce heat to low, and simmer until the chicken is cooked through, about 30 minutes.
  7. Remove the chicken pieces to a platter and keep warm.
  8. Carefully transfer the cooking liquid and solids into a blender or food processor. Blend until the sauce is as smooth as possible, working in batches if necessary.
  9. Return the blended mole sauce to the skillet with the chicken.
  10. Simmer uncovered for another 10 minutes to allow the flavors to meld and the sauce to thicken slightly.
  11. Serve the Chicken Mole warm with tortillas, rice, beans, and tamales.
