Ingredients

Directions

  1. Trim stems and remove any wilted outer leaves from Brussels sprouts; halve any large sprouts.
  2. In an extra-large skillet, cook bacon over medium heat until browned and crisp, turning occasionally; remove bacon and set aside, reserving drippings in skillet.
  3. Add Brussels sprouts to the reserved drippings; cook over medium heat until crisp-tender, then remove from pan and set aside.
  4. Pat chicken dry and add to the skillet skin side down; cook until golden brown on both sides, then remove from skillet.
  5. Add apples to the skillet; cook for 4 minutes or until browned on both sides, then remove from skillet.
  6. Drain and discard excess drippings from the skillet, leaving a light coating of fat.
  7. Add cider, thyme, mustard, and salt to the skillet, scraping up any browned bits from the bottom.
  8. Bring liquid to a boil, then reduce heat to low.
  9. Return chicken to the skillet; cover and simmer for 10 minutes.
  10. Add Brussels sprouts and apples to the skillet; cook, uncovered, for 3 to 5 minutes more or until chicken reaches an internal temperature of 175ðF.
  11. Crumble reserved bacon over the dish before serving.
