Description

This hearty Chicken Sauce Piquant is a true Louisiana classic, delivering bold flavors in every spoonful. The dish features tender chunks of chicken simmered in a robust sauce made from a dark roux, fresh mushrooms, and a blend of tomatoes and Chablis wine. Aromatics like onion, bell pepper, celery, and garlic create a fragrant base, while hot sauce and Worcestershire add depth and a gentle kick. Slow-cooked for hours, the flavors meld beautifully, resulting in a thick, savory stew that clings perfectly to spaghetti. Ideal for feeding a crowd or enjoying leftovers, this recipe brings the warmth and complexity of traditional Cajun cooking to your table. Its comforting, robust, and deeply satisfying.

Ingredients

Directions

  1. Cut 20 lbs of chicken into 2-inch pieces and pat dry.
  2. In a large heavy pot or Dutch oven, heat bacon drippings over medium-high heat.
  3. Brown the chicken pieces in batches until golden on all sides; remove and set aside.
  4. Reduce heat to medium and add flour to the remaining drippings to make a roux, stirring constantly until dark brown.
  5. Add chopped onion, bell pepper, celery, and green onions to the roux.
  6. Saut vegetables until tender and translucent, about 10-15 minutes.
  7. Stir in chopped garlic and parsley, cooking for 1 minute until fragrant.
  8. Return the browned chicken to the pot.
  9. Gradually whisk in water to create a smooth paste with the roux.
  10. Add tomato sauce, Chablis wine, Worcestershire sauce, hot sauce, dried mint, and stuffed olives.
  11. Add sliced mushrooms and enough additional water to cover the ingredients.
  12. Bring the mixture to a boil, then reduce heat to low.
  13. Cover and simmer gently for 4 to 6 hours, stirring occasionally, until chicken is very tender.
  14. Taste and adjust seasoning with salt and pepper if needed.
  15. Serve hot over spaghetti or rice.
