Directions
-
Place the whole chicken, 1 halved onion, celery ribs, and 1 garlic clove in a large stockpot.
-
Cover the ingredients with water and bring to a boil, then reduce heat and simmer for 1 hour until the chicken is tender.
-
Remove the chicken from the broth, reserving 5 cups of the liquid to cook the rice.
-
Cook the 2 cups of long grain rice in the reserved chicken broth until tender and liquid is absorbed (about 20-25 minutes).
-
While rice cooks, debone the chicken and cut the meat into bite-sized pieces.
-
Slice the smoked sausage into 1/2-inch rounds.
-
In a large Dutch oven, fry the sausage and cubed ham until lightly browned.
-
Remove the meat and set aside, leaving the rendered fat in the pot.
-
Add the margarine to the pot and saut the chopped onion, green pepper, and 1/2 cup of parsley until soft.
-
Return the chicken, sausage, and ham to the pot with the vegetables.
-
Stir in the minced garlic, tomato paste, bay leaf, thyme, salt, pepper, and Tabasco.
-
Add the cooked rice and mix thoroughly to combine all ingredients.
-
Cover and simmer over low heat for 15 minutes, stirring occasionally.
-
Remove the bay leaf and toss in the remaining 1/4 cup parsley and chopped green onion tops before serving.
