  1. In a large heavy kettle or Dutch oven, heat the bacon fat over medium heat.
  2. Dust the bite-size beef pieces with flour, then add to the kettle along with the chicken halves.
  3. Brown the meat on all sides, stirring occasionally.
  4. Add the leftover ham, cold water, salt, black pepper, red pepper flakes, and dried thyme.
  5. Bring the mixture to a boil, then reduce heat to low.
  6. Cover and simmer for 2 hours, or until the meat is tender.
  7. Remove the meats from the stock and set aside.
  8. Strain the stock through a fine-mesh sieve into a clean pot or back into the kettle.
  9. Skim any excess fat from the surface of the stock.
  10. Remove the chicken meat from the bones, discard the skin and bones, and cut the chicken into bite-size pieces.
  11. Cut the beef and ham into bite-size pieces if they haven't already fallen apart.
  12. Return all the meats to the stock along with the canned tomatoes, diced potatoes, and frozen corn.
  13. Bring back to a boil, then reduce heat, cover, and simmer for 45 minutes.
  14. Add the frozen okra and frozen lima beans.
  15. Simmer uncovered for 15 minutes longer, or until vegetables are tender.
  16. Stir in the frozen green beans and cook for 5 more minutes.
  17. Ladle into bowls and garnish with chopped fresh parsley before serving.
