  2. Cook the wild rice according to package instructions until tender but still chewy. Drain well and let cool.
  3. In a skillet, melt butter over medium heat. Sauté sliced mushrooms until browned and liquid has evaporated. Season with salt and pepper.
  4. Combine the cooked wild rice and sautéed mushrooms in a bowl. Let the mixture cool completely to room temperature.
  5. Place chicken breasts between plastic wrap and pound to an even 1/2-inch thickness. Season both sides with salt and pepper.
