Ingredients

Directions

  1. In a large bowl, combine 1 slice of firm white bread (torn into pieces), 2 tablespoons tomato paste, and 2 tablespoons water. Mash with a fork until a smooth paste forms.
  2. Add 3/4 pound lean ground beef, 2/3 cup drained and rinsed canned black beans (coarsely chopped), 2 tablespoons chopped fresh cilantro or parsley, 1 teaspoon crushed dried thyme, 1/2 teaspoon salt, and 1/2 teaspoon freshly ground black pepper to the bread mixture.
  3. In a nonstick skillet, heat 1 teaspoon canola oil over medium heat.
  4. Add 1 finely chopped small onion and sauté for 3 minutes until softened.
  5. Stir in 1 minced garlic clove, 1 minced seeded jalapeño pepper, and 2 teaspoons ground cumin. Sauté for 2 more minutes until fragrant. If the mixture becomes too dry, add 1 tablespoon of water. Remove from heat and let cool slightly.
  6. Add the cooled onion mixture to the beef and bean mixture. Mix thoroughly but gently with your hands to combine all ingredients evenly.
  7. Divide the mixture into four equal portions and shape into patties approximately 3/4-inch thick.
  8. Grill or broil the patties on a lightly oiled rack for about 5-7 minutes per side, until browned and cooked through.
  9. Serve the burgers on split and toasted onion hamburger rolls, topped with shredded lettuce and 1/2 cup tomato salsa.
