  1. Place the beef, chicken, and fish in the freezer for about 30 minutes until firm to the touch but not frozen solid; this makes slicing easier.
  2. Slice the beef and chicken into thin strips, approximately 1/4-inch thick and 2 inches long.
  3. Cut the fish into 3/4-inch cubes.
  4. Shell and devein the shrimp if using.
  5. Chop the Chinese cabbage into bite-sized chunks.
  6. Clean the mushrooms; if using forest mushrooms, remove and discard the stems, then slice them and sprinkle with lemon juice to prevent browning.
  7. Trim the root ends from the enoki mushrooms and separate the clusters as much as possible.
  8. Wash the pea pods, trim the ends, and remove the string.
  9. Clean the green onions, cut them in half lengthwise, and then into 2-inch lengths.
  10. Clean the spinach and discard any thick stems.
  11. Drain and slice the canned water chestnuts and bamboo shoots.
  12. Arrange all prepared meats, seafood, and vegetables in individual rows on large platters or serving plates for easy access.
  13. Bring the chicken broth to a boil in a large pot or the hot pot bowl.
  14. Place the heating unit under the hot pot and pour in the boiling broth.
  15. Serve the platters of ingredients alongside the boiling pot, along with prepared noodles and dipping sauces (sweet-and-sour, soy sauce, hot mustard).
