  2. Marinate the chicken cubes in 1 tablespoon soy sauce and 1 tablespoon Chinese rice wine (or dry sherry) for 30 minutes.
  3. In a small bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon cornstarch, 2 teaspoons sugar, and 1 teaspoon white vinegar; set aside.
