A vibrant, smoky-sweet dressing that adds a zesty kick to salads and grilled meats
Chipotle-Tangerine Vinaigrette recipe image

This Chipotle-Tangerine Vinaigrette is a bold and refreshing blend of bright citrus and smoky heat. Fresh tangerine juice is reduced to concentrate its flavor, then emulsified with olive oil, chipotle peppers in adobo, and a touch of honey. The result is a glossy dressing with a perfect balance of sweet, tangy, and spicy notes. It’s incredibly versatile, making it an excellent choice for drizzling over green salads, tossing with roasted vegetables, or using as a marinade for chicken and fish. The addition of fresh cilantro and cumin adds an earthy depth that complements the citrus beautifully. ItâÂÂs quick to whip up in a blender and keeps well in the fridge for up to two weeks.

Ingredients

Directions

  1. Pour the fresh tangerine juice into a small saucepan and place over moderate heat.
  2. Bring the juice to a simmer and cook, stirring occasionally, until it reduces by half, approximately 10-12 minutes.
  3. Remove the saucepan from heat and allow the reduced juice to cool completely to room temperature.
  4. While the juice cools, prepare the remaining ingredients: mince the chipotle pepper, grate the zest, and chop the herbs.
  5. Place the cooled reduced tangerine juice into the jar of a blender.
  6. Add the olive oil, minced chipotle in adobo, tangerine zest, lime zest, fresh lime juice, sherry vinegar, honey, tamarind concentrate, oregano, cilantro, ground cumin, ancho chile powder, and kosher salt.
  7. Secure the lid on the blender and blend on high speed for about 60 seconds until the vinaigrette is smooth and fully emulsified.
  8. Taste the dressing and adjust seasoning with additional salt or honey if needed.
  9. Transfer the vinaigrette to an airtight container.
  10. Store in the refrigerator for up to 2 weeks. Shake well before each use.
