  1. Sift the flour and 1/2 teaspoon of cinnamon onto a piece of waxed paper or a plate.
  2. In a saucepan, combine water and 3-1/2 tablespoons of butter; heat gently until the butter melts completely but do not let the water boil yet.
  3. Bring the liquid to a rapid boil, then immediately remove from heat.
  4. Add all the sifted flour at once and stir vigorously with a wooden spoon until a smooth dough forms.
  5. Return the pan to medium heat and cook for a few seconds, stirring constantly, until the dough forms a smooth ball and pulls away cleanly from the sides of the pan.
  6. Remove from heat and let the dough cool slightly, just enough to handle without burning.
  7. Gradually beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next, until the dough is smooth, shiny, and thick.
  8. Transfer the dough to a pastry bag fitted with a 3/4-inch plain tube.
  9. Pipe 24 small, uniform balls onto the prepared baking sheets, spacing them slightly apart.
  10. Continue baking for 15-20 minutes, or until the profiteroles are well-risen, crisp, golden brown, and sound hollow when tapped on the bottom.
  11. Make a small slit in the side of each pastry with a knife to allow steam to escape, preventing them from collapsing.
  12. Transfer the baked profiteroles to a wire rack and allow them to cool completely.
  13. In a chilled bowl, whip the whipping cream, powdered sugar, and coffee flavoring together until stiff peaks form.
  14. Transfer the whipped cream to a pastry bag fitted with a small star tip, or keep in a bowl for spooning.
  15. Pipe or spoon the cream filling into the cooled profiteroles.
