  1. Sift and measure the cake flour.
  2. Butter two 8-inch round cake pans.
  3. Line the bottoms with wax paper, butter the paper, and flour the pans.

  8. In the top of a double boiler over hot (not simmering) water, melt the bittersweet chocolate.
  9. Set the melted chocolate aside to cool slightly.
  10. Beat egg whites with 1/2 cup of sugar until stiff peaks form.
  11. Set the beaten egg whites aside.
  12. Beat egg yolks with the remaining 1/4 cup sugar until thick and ribbon-like.
  13. Fold the banana mixture and melted chocolate into the beaten egg yolks.
  14. Alternately fold in the beaten egg whites and the sifted flour, adding them in thirds.
  15. Mix gently until just smooth; do not overmix.
  16. Divide the batter equally between the prepared pans.
  17. Bake in the preheated oven for about 25 minutes, or until a knife inserted into the center comes out clean.
  18. Cool in pans for 2 minutes, then invert onto a cooling rack to cool completely.
  19. Once cool, split each cake layer horizontally to create four layers total.
  20. Peel the remaining three bananas and slice them into 1/8-inch thick rounds.
  21. Spread a layer of crème pâtissière on the bottom cake layer.
  22. Arrange banana slices over the cream.
  23. Repeat the process with cream and banana slices for the next two layers.
  24. Top with the final cake layer.
  25. Sprinkle the top of the cake with confectioners' sugar before serving.
