  2. Bring to a boil over medium heat, stirring until the sugar dissolves.
  3. Boil without stirring for 4 to 5 minutes, until the syrup turns deep amber.
  4. Remove from heat and carefully add heavy cream; stir until smooth.
  5. If necessary, briefly return to low heat to dissolve any sugar crystals.
  6. Pour caramel into a small bowl, let cool to room temperature, then refrigerate until chilled (at least 2 hours).
  7. Place bittersweet chocolate in a food processor and pulse until finely chopped.
  8. In a small saucepan, bring cream to a simmer over medium heat.
  9. Pour hot cream over the chocolate in the processor.
  10. Add butter and vanilla extract; process until the mixture is smooth and creamy.
  11. Scrape ganache into a medium bowl, cover, and refrigerate until firm enough to pipe (about 1 hour).
  12. Line a baking sheet with waxed paper.
  13. Using a damp 1/4-teaspoon measure, scoop out small balls of chilled caramel and place on the waxed paper.
  14. Freeze caramel centers for 15-20 minutes to firm up.
  15. Transfer chilled ganache to a pastry bag fitted with a 1/2-inch plain tip.
  16. Pipe 1 1/4-inch mounds with pointed peaks onto a clean baking sheet.
  17. Refrigerate or freeze truffles for 10 to 20 minutes until firm enough to roll.
  18. Sift confectioners' sugar over the chilled truffles.
  19. Coat your hands with sugar and roll each truffle into a 1 1/4-inch ball.
  20. Place rolled truffles on a baking sheet and refrigerate for 10 minutes to firm.
  21. Remove 5-6 frozen caramel centers and place on a cold plate.
  22. Pinch a caramel center into a small ball.
  23. Use your index finger to make an indentation 2/3 of the way through the center of a chocolate truffle.
  24. Insert the caramel center into the indentation.
  25. Mold the chocolate around the caramel to seal it completely.
  26. Repeat with remaining truffles and caramel centers.
  27. Refrigerate assembled truffles for at least 30 minutes to set.
  28. Roll half the truffles in sifted confectioners' sugar.
  29. Roll the remaining truffles in sifted cocoa powder.
  30. Store in an airtight container in the refrigerator.
