Description

This unconventional Chocolate Chip Torte is a study in contrasts, combining the airy sweetness of a baked meringue with the unexpected crunch of crushed potato chips. The star of the show is the dense, fudgy chocolate filling, enriched with butter and egg yolks for a luxurious texture that rivals any truffle. The salty crunch of the chips cuts through the intense sweetness of the chocolate and meringue, creating a complex flavor profile that is both indulgent and surprising. While it may sound unusual, this dessert is a testament to the power of balancing sweet, salty, and creamy elements. It is perfect for adventurous dessert lovers or as a show-stopping finale to a dinner party. Best served chilled but not too cold, to allow the meringue to retain its slight crispness.

Ingredients

Directions

  1. Preheat oven to 300 degrees F (150 degrees C).
  2. In a clean, dry bowl, beat egg whites with salt and cream of tartar until foamy.
  3. Gradually add most of the sugar, beating on high speed until stiff, glossy peaks form (about 10-15 minutes).
  4. Gently fold in vanilla extract and the crushed potato chips until evenly distributed.
  5. Line two baking sheets with parchment paper.
  6. Divide the meringue mixture in half and spread each half into a 9-inch circle, about 3/4-inch thick.
  7. Bake for 45 minutes until the outside is dry and crisp but the inside is slightly soft.
  8. Remove from oven and let cool completely on the parchment paper.
  9. For the filling, combine unsweetened chocolate and milk in a heavy saucepan.
  10. Cook over medium heat, stirring constantly, until the chocolate is completely melted and smooth.
  11. In a small bowl, whisk together the remaining sugar, flour, and salt.
  12. Slowly whisk the sugar mixture into the hot chocolate mixture.
  13. Continue to cook and stir until the mixture thickens significantly, about 10-15 minutes.
  14. In a separate bowl, lightly beat the egg yolks.
  15. Temper the yolks by slowly drizzling in a few tablespoons of the hot chocolate mixture while whisking.
  16. Pour the tempered yolks back into the saucepan and cook for 3 more minutes, stirring constantly.
  17. Remove from heat and stir in butter and the remaining vanilla extract.
  18. Let the filling cool to room temperature.
  19. Place one meringue round on a serving plate. Spread the cooled chocolate filling evenly over the top.
  20. Place the second meringue round on top of the filling.
  21. Spread the sweetened whipped cream around the sides and top of the torte.
  22. Chill in the refrigerator for up to 2 hours before serving to set the cream, but avoid longer chilling to prevent the meringue from wilting.
  23. Serve with additional whipped cream or a scoop of vanilla ice cream.
