Line the base of an 18cm (7-inch) loose-bottomed round cake tin or flan tin with non-stick baking parchment.

Break the plain or milk chocolate into small pieces and place in a heatproof bowl.

Break the white chocolate into small pieces and place in a separate heatproof bowl.

Cut the butter into 8 small pieces, adding 4 pieces to each bowl of chocolate.

Place both bowls over pans of simmering hot water, ensuring the bottoms do not touch the water.
