Ingredients

Directions

  1. Lightly grease an 8x8 inch baking pan and set aside.
  2. In a heavy-bottomed saucepan, combine the sugar, unsweetened baking chocolate, and evaporated milk.
  3. Place the saucepan over medium heat and stir constantly until the chocolate and sugar are completely dissolved and the mixture is smooth.
  4. Once dissolved, stop stirring and bring the mixture to a boil.
  5. Cook the mixture without stirring until it reaches the soft-ball stage (238°F (114°C) (116°C)to 240°F). To test, drop a small amount into cold water; it should form a soft, pliable ball. This usually takes about 7 to 8 minutes after boiling begins.
  6. Remove the saucepan from the heat immediately.
  7. Add the vanilla extract and margarine (and peanut butter if using).
  8. Let the mixture cool slightly, then beat it vigorously with a wooden spoon or mixer until it begins to thicken and loses its glossy sheen, resembling the consistency of pudding.
  9. Pour the thickened fudge into the prepared greased pan.
  10. Allow the fudge to cool at room temperature until it is almost firm, about 30-45 minutes.
  11. Score the fudge into squares while it is still slightly soft to ensure clean cuts.
  12. Let the fudge cool completely until firm, then cut along the scored lines and serve.
