  2. Place graham crackers in a food processor and pulse until finely ground.
  3. Add melted butter to the crumbs and pulse until the mixture resembles wet sand.
  4. Press the crust mixture firmly and evenly onto the bottom of a 9-inch springform pan. Do not press up the sides.
  5. Bake the crust for 8 minutes until golden brown.
  6. Remove crust from oven and transfer to a wire rack to cool. Reduce oven temperature to 325°F (160°C).
  7. In a large bowl, beat cream cheese and sugar with an electric mixer until smooth and creamy.
  8. Add all-purpose flour and beat until just combined.
  9. Add eggs one at a time, beating on low speed just until each egg is incorporated.
  10. Mix in sour cream, Baileys Irish Cream, and vanilla extract until the batter is uniform.
  11. Pour the filling over the baked crust. Note: The batter will not fill the pan completely.
  12. Bake for 10 minutes at 325°F (163°C).
  13. Without opening the oven door, reduce temperature to 300°F (150°C) and continue baking for 40 minutes, or until the center is set.
  14. Cool the cheesecake in the pan on a wire rack for 10 minutes.
  15. Run a sharp knife around the edge of the pan to loosen the cake, then let it cool completely.
  16. Refrigerate the cheesecake overnight to chill thoroughly.
  17. For the glaze, bring whipping cream to a simmer in a medium heavy saucepan over medium heat.
  18. Reduce heat to low and remove from heat.
  19. Add chopped semisweet chocolate to the hot cream and stir gently until melted and smooth.
  20. Let the chocolate glaze cool to lukewarm temperature.
  21. Release the sides of the springform pan and place the cheesecake on a rack set over a baking sheet.
