Description

This Chocolate Honey Almond Crunch is a decadent homemade treat that combines the nutty depth of toasted almonds with the warm sweetness of honey and dark rum. The base is a carefully cooked caramel that coats sliced almonds, creating a satisfying crunch. Once baked until golden, its topped with semi-sweet chocolate that melts into a glossy, indulgent layer. The result is a complex flavor profile balancing sweet, savory, and chocolatey notes. Perfect for gifting, holiday parties, or as an elegant addition to ice cream and desserts. It requires a bit of patience to achieve the right caramel consistency, but the rich, brittle texture is well worth the effort.

Ingredients

Directions

  1. Preheat the oven to 325F (165C).
  2. Spread 2 cups of sliced almonds on a baking sheet and toast in the oven for 12-14 minutes until golden brown.
  3. Remove almonds from the oven and let them cool completely to room temperature.
  4. Line two 9x13-inch baking sheets with parchment paper.
  5. In a heavy-bottomed saucepan, melt the unsalted butter over low heat, stirring constantly.
  6. Once melted, add the granulated sugar, water, Myers Dark Rum, and honey.
  7. Increase heat to medium-high and bring the mixture to a boil, stirring until sugar dissolves.
  8. Attach a candy thermometer and cook without stirring until the mixture reaches 220F (104C).
  9. Stir in the remaining 2 cups of untoasted almonds and continue cooking until the mixture reaches 225F (107C).
  10. Immediately pour the almond mixture evenly onto the two prepared baking sheets.
  11. Bake in the oven for 24-26 minutes, rotating the sheets halfway through, until the mixture is evenly caramelized and bubbly.
  12. Remove from oven and let cool for 5 minutes.
  13. While still warm, sprinkle the chopped semi-sweet chocolate evenly over both sheets.
  14. Let stand for 5 minutes to allow chocolate to soften, then spread it evenly with a spatula.
  15. Sprinkle the previously toasted almonds over the chocolate layer.
  16. Place the baking sheets in the freezer for 20 minutes to set.
  17. Remove from freezer and break the crunch into irregular pieces.
  18. Store in an airtight container in the refrigerator or freezer.
