Simple to assemble yet sophisticated in presentation, they are a crowd-pleasing dessert that pairs beautifully with coffee or tea.Ingredients
Directions
-
Divide the mint-chocolate chips: reserve 1 cup for dipping and set aside 1/2 cup for the dough.
-
Melt the reserved 1/2 cup of mint-chocolate chips over a double boiler (hot water that is not boiling), stirring until smooth. Let cool to room temperature.
-
In a large mixing bowl, beat the softened butter and sugar together until light and creamy.
-
Add the large egg and vanilla extract to the butter mixture; beat until well blended.
-
Gradually beat in the flour and salt until a soft dough forms.
-
Remove 1 cup of the plain dough from the bowl and set aside.
-
Add the cooled melted mint-chocolate chips to the remaining dough in the bowl; mix thoroughly until combined. The mixture may look slightly curdled.
-
Shape the chocolate-mint dough into a ball and flatten it slightly. Wrap tightly in plastic wrap.
-
Shape the reserved plain dough into a ball and flatten it slightly. Wrap tightly in plastic wrap.
-
Chill both dough balls in the refrigerator until firm, about 1 1/2 hours.
-
Preheat oven to 375 degrees F (190 degrees C).
-
Place each dough ball between two sheets of waxed paper. Roll each into a 13 x 9-inch rectangle.
-
Remove the top sheet of waxed paper from the chocolate-mint dough and invert it onto the plain dough rectangle.
-
Peel off the remaining waxed paper from the top.
-
Starting from the long side, tightly roll the two layers together into a jelly roll style log.
-
Cut the log into 1/4-inch thick slices. Place slices cut-side down on ungreased cookie sheets.
-
Bake for 7 to 8 minutes, or until the edges just begin to turn golden.
-
Transfer cookies to wire racks and let cool completely.
-
Melt the remaining 1 cup of mint-chocolate chips over a double boiler, stirring until smooth.
-
Dip the flat bottom of each cooled cookie into the melted chocolate, using about 1/2 teaspoon per cookie.
-
Place dipped cookies on waxed paper and chill until the chocolate coating is set.
