Ingredients

Directions

  1. Preheat the oven to 250&# 194;°F (120ðC). Butter and flour a cake pan thoroughly.
  2. Melt the bittersweet chocolate and butter together in a saucepan over low heat, stirring until smooth. Do not let it boil.
  3. In a large bowl, beat the 10 egg yolks with 5 oz of sugar until pale and thick.
  4. Stir half of the melted chocolate mixture into the yolk mixture until fully combined.
  5. In a clean bowl, beat 6 egg whites until stiff peaks form.
  6. Gently fold the chocolate-yolk mixture into the beaten egg whites in two additions.
  7. Sift the flour over the mixture and fold it in gently until just incorporated.
  8. Pour the batter into the prepared pan and bake for 45 minutes until the top is set.
  9. Remove from oven and let the cake cool completely in the pan.
  10. In a clean bowl, beat the remaining 6 egg whites until stiff. Gradually add the remaining 5 oz of sugar while beating to make a meringue.
  11. Ensure the remaining melted chocolate is only slightly warm, then fold it into the meringue until no white streaks remain.
  12. Spread the chocolate mousse evenly over the cooled cake.
  13. Sprinkle grated chocolate over the top and sides of the cake.
  14. Refrigerate for at least 2 hours to set before serving.
