Ingredients

Directions

  1. Line an 8-inch square baking pan with plastic wrap, leaving a 2-inch overhang on two sides to use as handles later.
  2. Coarsely chop 6 ounces of Swiss milk chocolate.
  3. In a medium bowl, beat 3/4 cup creamy peanut butter and 2 tablespoons peanut oil with a hand-held electric mixer on medium speed until smooth.
  4. Beat in the chopped milk chocolate and 1 1/3 cups crushed chocolate-laced cookies (such as Pirouette) until well combined.
  5. Scrape the peanut butter mixture into the prepared pan and spread with a rubber spatula to form an even layer.
  6. Tap the pan on the counter gently to remove any air bubbles.
  7. Cover the pan with plastic wrap and freeze for 20 minutes, or until the layer is firm.
  8. Meanwhile, melt 6 ounces of Swiss dark chocolate according to package instructions or in a double boiler.
  9. Transfer the melted dark chocolate to a large bowl and stir in 1 tablespoon peanut oil.
  10. In a chilled large bowl, beat 1 1/4 cups heavy cream with a hand-held electric mixer on high speed just until soft mounds begin to form; do not overwhip.
  11. Using a rubber spatula, quickly fold half of the whipped cream into the chocolate mixture to lighten it.
  12. Gently fold in the remaining whipped cream until no white streaks remain.
  13. Scrape the bittersweet chocolate mixture over the frozen milk chocolate layer in the pan.
  14. Spread the chocolate mixture into an even layer and tap the pan on the counter to remove air bubbles.
  15. Cover tightly with plastic wrap and refrigerate for at least 6 to 8 hours, or up to 2 days.
  16. To unmold, lift the cake out of the pan using the plastic wrap handles and slide it off onto a cutting board.
  17. Dust the top with cocoa powder if desired.
  18. Dip a long sharp knife in hot water and wipe dry, then cut the cake into 1-inch strips.
  19. Cut each strip in half to create eight 4-by-1-inch bars.
  20. Allow the bars to stand at room temperature for a few minutes before serving to soften slightly.
