  1. Measure out 2 teaspoons of unflavored gelatin powder, 1 teaspoon vanilla extract, 1/2 teaspoon peppermint extract, 1/2 cup sugar, 1 tablespoon sugar, and 2 large egg whites at room temperature.
  2. In a medium bowl, whisk together 1/4 cup of the milk, the whole egg, 1/3 cup corn syrup, and the cocoa powder until the mixture is completely smooth.
  3. In a large saucepan, heat the remaining 3/4 cup of milk over medium heat until small bubbles appear at the edges.
  4. Slowly whisk a ladleful of the hot milk into the cocoa mixture to temper it, then pour the cocoa mixture back into the saucepan with the remaining milk.
  5. Cook the mixture over medium heat, stirring constantly with a wooden spoon, for 3 to 5 minutes until it thickens slightly and coats the back of the spoon.
  6. Remove the chocolate mixture from the heat and whisk in the softened lowfat cream cheese until the mixture is smooth and uniform. Set aside to cool slightly.
  7. Sprinkle the gelatin powder over 1/4 cup of water in a small bowl and let it soften for a few minutes.
  8. Heat the softened gelatin gently until dissolved, then whisk it into the chocolate mixture along with the vanilla and peppermint extracts. Set aside.
  9. In a small saucepan, combine 1/4 cup water, 1/2 cup sugar, and 2 teaspoons light corn syrup.
  10. Bring the sugar syrup to a boil over medium-high heat and cook for about 5 minutes, until it reaches the fine thread stage (approximately 230°F (110°C)).
  11. While the syrup is cooking, beat the egg whites in a clean bowl until soft peaks form.
  12. Gradually add 1 tablespoon of sugar to the egg whites and continue beating until stiff, satiny peaks form, being careful not to overbeat until the syrup is ready.
  13. Once the syrup reaches 239°F (115°C) (soft ball stage), slowly pour it in a thin stream down the side of the bowl into the beating egg whites.
  14. Continue beating the meringue for about 5 minutes until it is stiff, glossy, and cool to the touch.
  15. Whisk one cup of the prepared meringue into the chocolate mixture to lighten it, then gently fold in the remaining meringue until no white streaks remain.
  16. Spoon the filling into a prepared pie crust.
  17. Refrigerate the pie for at least 4 hours, or until firmly set, before serving.
