  1. Melt the unsweetened chocolate over very low heat. Add 1 cup of milk and heat gently until the chocolate is fully dissolved into the milk. Remove from heat and allow the mixture to cool completely to room temperature.
  2. In a separate bowl, beat the eggs until they are light and fluffy. Add the 1 cup of sugar and beat until well combined. Gradually add the cream and vanilla, beating thoroughly.
  3. Slowly pour the cooled chocolate mixture into the egg mixture, beating constantly to ensure everything is well incorporated. Cover and refrigerate the mixture until it is very cold, about 1-3 hours.
  4. While the chocolate base is chilling, mash the raspberries with the additional 1/8-1/4 cup of sugar. Cover the raspberry mixture and refrigerate it separately.
  5. Pour the chilled chocolate base into your ice cream maker and freeze according to the manufacturer's instructions.
  6. When the ice cream is nearly finished churning (about 2 minutes before it is done), add the raspberry mixture. This prevents the berries from sinking to the bottom.
  7. Finish freezing the ice cream until firm. Transfer to a container if necessary and enjoy immediately or freeze for a firmer texture.

Note

For a smoother texture, you can strain the raspberry mixture before adding it to the ice cream to remove seeds.

If you do not have an ice cream maker, you can freeze the base in a shallow container, stirring every 30 minutes with a fork to break up ice crystals, then fold in the raspberries when it starts to thicken.

For best results, ensure the chocolate mixture is completely cooled before adding it to the eggs to avoid scrambling them.
