Ingredients

Directions

  1. Preheat oven to 425&# 194;°F (220ðC). Lightly grease a baking sheet.
  2. In a medium bowl, sift together 2 tablespoons unsweetened cocoa powder, the flour, 2 tablespoons granulated sugar, the baking powder, 1/4 teaspoon baking soda, and the salt.
  3. Cut the cold butter into small cubes and add to the dry ingredients. Use a pastry cutter or fork to blend until the mixture resembles coarse meal.
  4. Add 4 tablespoons of heavy cream and stir with a fork just until a soft dough forms.
  5. Divide the dough in half and shape each half into a round mound on the prepared baking sheet, keeping them about 3 inches apart.
  6. Bake for 12 minutes, or until a tester inserted into the center comes out with a few crumbs clinging to it.
  7. Transfer shortcakes to a wire rack to cool completely.
  8. While shortcakes cool, mash 3/4 cup of fresh raspberries with a fork in a small bowl.
  9. Stir in 1 tablespoon granulated sugar and 1 tablespoon framboise (raspberry liqueur) until the sugar is dissolved. Gently fold in the remaining 3/4 cup whole raspberries.
  10. In a separate chilled bowl, beat 1/3 cup well-chilled heavy cream with an electric mixer until soft peaks form.
  11. Add the remaining 1 tablespoon granulated sugar and continue beating until stiff peaks form.
  12. Carefully cut each cooled shortcake in half horizontally.
  13. Place the bottom halves on plates and spoon half of the raspberry mixture over each.
  14. Top with a generous dollop of whipped cream.
  15. Place the top halves of the shortcakes over the cream.
  16. Sprinkle lightly with confectioners' sugar and garnish with fresh mint sprigs if desired.
