  1. Preheat oven to 325F (163C).
  2. Butter the inside of a springform pan well and wrap the outside bottom and sides with heavy-duty aluminum foil, shiny side out, to reflect heat and prevent overcooking.
  3. Mix graham cracker crumbs with 2 tablespoons of sugar and add melted butter.
  4. Press the mixture evenly onto the bottom and sides of the prepared pan; refrigerate until ready to use.
  5. Cut semisweet chocolate into small pieces and melt in the microwave.
  6. Combine melted chocolate with rum and set aside.
  7. Beat cream cheese with an electric mixer until light and fluffy.
  8. Gradually beat in the remaining 3/4 cup sugar, sour cream, and vanilla.
  9. Add eggs one at a time, mixing well after each addition.
  10. Place the bowl over a pan of hot water (ensuring water does not touch the bottom of the bowl) and mix until smooth.
  11. Pour about 1 1/4 cups of the plain batter into a separate bowl and set aside.
  12. Whisk the reserved chocolate-rum mixture into the remaining batter in the main bowl, then stir over hot water until smooth.
  13. Remove the springform pan from the refrigerator and fill the bottom with the chocolate batter.
  14. Gently pour the plain batter over the top and use a fork to make swirls, dragging the plain batter down into the chocolate layer.
  15. Place on the middle rack of the oven and bake for 50 minutes.
  16. Cool to room temperature, remove the foil and pan rim, and refrigerate overnight.
