Description

Indulge in these decadent Chocolate Sin Raspberry Truffle Brownies, a dessert that balances intense chocolate richness with bright berry notes. The base is a dense, fudgy brownie baked to perfection, infused with a hint of instant coffee to deepen the cocoa flavor. This is topped with a luscious, no-bake raspberry truffle layer made from cream cheese and preserves, offering a tangy contrast to the sweet chocolate. Finished with a delicate chocolate glaze, these bars are perfect for potlucks, holiday parties, or simply treating yourself on a cozy evening. They store well in the fridge, making them an ideal make-ahead dessert.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC). Grease a 9x9 inch baking pan and line with parchment paper if desired.
  2. In a small saucepan over low heat, melt the semisweet chocolate chips and margarine together, stirring constantly until smooth. Remove from heat and let cool slightly.
  3. In a large mixing bowl, beat the brown sugar and eggs until well combined and slightly fluffy.
  4. Dissolve the instant coffee crystals in the 2 tablespoons of water, then add this mixture to the chocolate-margarine blend. Stir to combine.
  5. Pour the chocolate mixture into the egg and sugar mixture. Mix well until fully incorporated.
  6. Stir in the baking powder and all-purpose flour just until blended. Do not overmix.
  7. Spread the batter evenly into the prepared 9x9 inch pan.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the brownie layer to cool completely in the pan.
  9. For the truffle filling: In a small saucepan over low heat, melt 1 cup of semisweet chocolate chips with 1/4 teaspoon instant coffee crystals. Set aside to cool slightly.
  10. In a small mixing bowl, beat 8 oz of softened cream cheese until fluffy. Add 1/4 cup powdered sugar and 1/3 cup seedless red raspberry preserves. Beat until smooth and fluffy.
  11. Beat the melted chocolate mixture into the cream cheese mixture until well blended and smooth.
  12. Spread the truffle filling evenly over the cooled brownie layer.
  13. For the glaze: In a small saucepan over low heat, melt 1/4 cup semisweet chocolate chips with 1 teaspoon shortening.
  14. Drizzle the chocolate glaze over the truffle layer.
  15. Refrigerate the brownies for 1-2 hours to set the layers. Cut into bars and serve chilled.
