  1. Preheat oven to 325&# 194;°F (165ðC). Coat the bottom and sides of a 10-inch springform pan with non-stick cooking spray.
  2. Sprinkle the chocolate cookie crumbs evenly over the bottom of the prepared pan. Set aside.
  3. In a food processor, combine the cottage cheese and cream cheese. Process until completely smooth and creamy.
  4. Add 1 cup sugar, whole eggs, and vanilla extract to the processor. Process again until well combined and smooth.
  5. Remove about 3 cups of the plain cheesecake mixture and transfer it to a large bowl. Set aside.
  6. To the remaining mixture in the food processor, add cocoa powder and 2 tablespoons sugar. Process until smooth and uniformly brown.
  7. Transfer the chocolate mixture to a medium bowl. You now have two separate batters: plain and chocolate.
  8. In a clean, dry bowl, beat the egg whites and cream of tartar until foamy.
  9. Gradually add the remaining 2 tablespoons of sugar to the egg whites. Beat until stiff peaks form.
  10. Take about one-quarter of the beaten egg whites and fold them gently into the chocolate cheesecake mixture until just combined.
  11. Fold the remaining egg whites into the plain cheesecake mixture, being careful not to deflate the batter.
  12. Spoon alternating dollops of the plain and chocolate mixtures into the prepared springform pan.
  13. Use a knife or skewer to gently swirl the batters together, creating a marble pattern. Do not overmix.
  14. Bake in the preheated oven for 50 minutes, or until the edges are set but the center still has a slight jiggle.
  15. Remove from the oven and let cool at room temperature for 15 minutes.
  16. Cover the cheesecake loosely with plastic wrap and refrigerate for at least 8 hours or overnight to set completely.
  17. Run a knife around the edge of the pan before releasing the springform ring. Slice and serve chilled.
