  1. Preheat oven to 350&# 194;°F (175ðC). Spread chopped almonds in a shallow pan and toast for about 10 minutes until fragrant and lightly golden. Set aside to cool.
  2. In a microwave-safe bowl or over a double boiler, melt the unsweetened chocolate and semi-sweet chocolate together. Stir until smooth and set aside to cool slightly.
  3. In a clean bowl, beat egg whites with cream of tartar and salt until foamy. Gradually add 1/4 cup sugar, one tablespoon at a time, beating until soft peaks form.
  4. In a separate large bowl, beat 2 cups of whipping cream until stiff peaks form.
  5. Add the remaining 2 teaspoons of sugar, vanilla extract, and the melted chocolate to the whipped cream. Beat gently until fully combined and smooth.
  6. Gently fold the beaten egg whites into the chocolate cream mixture using a spatula, being careful not to deflate the air bubbles.
  7. Fold in the toasted almonds and chopped candied cherries. Small chunks of chocolate may remain, which adds texture.
  8. Line a muffin pan or small cups with paper baking cups. Spoon the mixture into the cups, filling them about three-quarters full.
  9. Freeze the tortoni for at least 4 hours, or preferably overnight, until firm.
  10. Before serving, beat the remaining 1/2 cup of whipping cream until stiff. Pipe or spoon a rosette of whipped cream on top of each tortoni and garnish with a candied cherry if desired.
