Ingredients

Directions

  1. Sift the all-purpose flour into a large mixing bowl or the bowl of a stand mixer fitted with a dough hook.
  2. Add the salt to the flour and mix briefly to distribute evenly.
  3. Crack the eggs into a separate small bowl, add the white vinegar, and whisk lightly until combined.
  4. Make a well in the center of the flour and pour in the egg mixture.
  5. Using a fork or your hands, gradually incorporate the flour into the eggs until a shaggy dough forms.
  6. Knead the dough on a lightly floured surface for about 8-10 minutes, or until smooth and elastic. If using a mixer, knead on low speed for 5-7 minutes.
  7. Wrap the dough tightly in plastic wrap and let it rest at room temperature for 30 minutes to relax the gluten.
  8. While the dough rests, bring a large pot of generously salted water to a rolling boil.
  9. After resting, roll out the dough using a pasta machine or a rolling pin until it is very thin, about 1/16 inch thick.
  10. Cut the dough into strips approximately 1/8 inch wide and 4-5 inches long using a pasta cutter or a sharp knife.
  11. Toss the cut noodles with a little flour to prevent sticking.
  12. Drop the noodles into the boiling water and stir gently to separate them.
  13. Cook for 1-2 minutes, or until the noodles float to the surface and are tender but still firm.
  14. Drain the noodles immediately and plunge them into a bowl of ice water to stop the cooking process.
  15. Drain well and toss with a tablespoon of oil to prevent clumping.
  16. Serve immediately in your stir-fry or store in the refrigerator for up to 2 days.
