  1. Preheat the oven to 190&# 194;°C (375°F) and grease two baking sheets.
  2. Sift the plain flour, bicarbonate of soda, and ground mixed spice into a large mixing bowl.
  3. Rub the chilled, cubed butter into the dry ingredients until the mixture resembles fine breadcrumbs.
  4. Stir in the soft light brown sugar.
  5. Add the heated golden syrup and beaten egg to the mixture.
  6. Mix everything together to form a cohesive dough.
  7. Turn the dough out onto a lightly floured surface and gently knead until smooth.
  8. Roll the dough out to approximately 1/4 inch thickness.
  9. Use Christmas tree-shaped cutters to cut out 16 shapes.
  10. Lift the cut-out shapes and place them on the prepared baking sheets.
