Description

This luxurious cinnamon ice cream transforms simple dairy into a warm, comforting dessert. The base is infused with steeped cinnamon sticks, imparting a deep, spicy aroma that balances the sweetness of the custard. Creamy and smooth, it offers a sophisticated twist on classic ice cream, perfect for cooling down on a hot evening or serving alongside fresh fruit. While it requires some patience for the custard to chill and freeze, the result is a velvety treat that feels homemade and indulgent. It pairs beautifully with warm pies or simply enjoyed on its own as a standalone delight.

Ingredients

Directions

  1. Combine half and half, cinnamon sticks, and vanilla bean in a heavy large saucepan.
  2. Scald the mixture over very low heat until just simmering.
  3. Remove from heat, cover, and let stand at room temperature for at least 1 hour to infuse.
  4. Combine sugar and egg yolks in a large bowl of an electric mixer.
  5. Beat at high speed until the mixture forms a slowly dissolving ribbon when beaters are lifted.
  6. Reheat the half and half mixture over low heat until warm.
  7. Gradually beat 2 cups of the warm half and half mixture into the egg yolk mixture.
  8. Stir the yolk mixture into the remaining half and half in the saucepan.
  9. Cook over low heat, stirring constantly, until the thermometer registers 180&# 194;°F and the custard coats the back of a spoon; do not boil.
  10. Immediately transfer the custard to a large bowl to stop cooking.
  11. Cool the custard for at least 2 hours.
  12. If possible, cover and refrigerate for several hours or overnight for best texture.
  13. Strain the custard, discarding the cinnamon sticks and vanilla bean.
  14. Whisk in the whipping cream until well combined.
  15. Transfer to an ice cream maker (in batches if necessary) and freeze according to manufacturer's instructions.
  16. To serve, spoon into a large bowl and garnish with fresh strawberries if desired.
