Description

These homemade cinnamon rolls are the ultimate comfort food, featuring a tender, yeasted dough enriched with molasses and butter. The filling combines classic cinnamon and sugar with plump raisins for a burst of sweetness in every bite. Perfect for weekend breakfasts or holiday brunches, these rolls offer a soft, fluffy texture that melts in your mouth. While they require some patience for rising, the result is a fragrant, golden-brown pastry that tastes far superior to any store-bought version. Serve them warm with a cup of coffee or tea for a satisfying start to your day.

Ingredients

Directions

  1. Sprinkle yeast over warm water and stir to dissolve.
  2. Add molasses and dry milk to the yeast mixture.
  3. Let the mixture stand for 10 minutes until foamy.
  4. Whisk in the separated egg yolk and egg white.
  5. Add the first portion of unbleached flour (Flour A) and beat until blended.
  6. Continue beating the mixture for 10 minutes to develop gluten.
  7. Cover the bowl and let the dough rise in a warm place for about 1 hour 20 minutes, or until doubled in size.
  8. Fold in the melted butter and salt into the risen dough.
  9. Gradually add the whole wheat pastry flour and the second portion of unbleached flour (Flour B), one cup at a time, folding gently.
  10. Turn the dough out onto a lightly floured surface when it holds together in one mass.
  11. Knead the dough for 8-10 minutes, adding more flour as needed, until smooth and elastic.
  12. Place the dough in a lightly oiled bowl, turning to coat the top, and cover with a towel.
  13. Let the dough rise again until doubled in size, approximately 1 to 1.5 hours.
  14. Punch down the dough and roll it out into a 12x14 inch rectangle on a floured surface.
  15. Spread softened butter evenly over the entire surface of the dough.
  16. Sprinkle generously with sugar, cinnamon, and raisins.
  17. Roll the dough up tightly from the long edge, crimping the edge to seal.
  18. Cut the log into 16 equal sections, approximately 3/4 inch wide.
  19. Place the rolls flat side down on greased baking sheets.
  20. Cover and let the rolls rise for 30 minutes until puffy.
  21. Mix the remaining egg with 1 tablespoon of cool water and brush over the tops of the rolls.
  22. Bake at 375°F (190°C) for 20-25 minutes, or until golden brown.
