Ingredients

Directions

  1. In a large bowl, combine 2 cups of flour, the dry yeast, and sugar substitute.
  2. In a small saucepan, heat milk, 1/3 cup margarine, and salt until the mixture reaches 120-130&# 194;°F.
  3. Pour the warm liquid mixture into the flour mixture.
  4. Add eggs and beat at low speed with an electric mixer for 30 seconds.
  5. Increase speed to high and beat for 3 minutes.
  6. Gradually add the remaining 2 cups of flour, stirring until a stiff dough forms.
  7. Turn dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  8. Place dough in a greased bowl, turn to coat top, cover, and let rise in a warm place for 1 hour or until doubled.
  9. Punch dough down and divide it in half. Cover and let rest for 10 minutes.
  10. Roll one half of the dough into a 12x8 inch rectangle.
  11. Brush half of the remaining melted margarine over the dough.
  12. Sprinkle with half of the cinnamon-sugar substitute mixture and half of the raisins.
  13. Roll up jellyroll-fashion from the long side, pressing edges securely.
  14. Cut into 12 slices and arrange in a greased 9-inch round baking pan.
  15. Repeat the rolling and filling process with the remaining dough, margarine, cinnamon mixture, and raisins.
  16. Cover rolls and let rise in a warm place for 30 minutes or until doubled in bulk.
  17. Bake at 375ðF (191ðC) for 20-25 minutes or until golden brown.
  18. Cool slightly before removing from pans and serving warm.
