Description

Cioppino is a hearty Italian-American seafood stew that originated in San Francisco. This version features a robust base of olive oil, garlic, onions, celery, and bell peppers simmered with fresh tomatoes, wine, fennel, and saffron. The broth becomes the perfect vehicle for an array of seafood, including clams or mussels, lobster, Dungeness crab, shrimp, and red snapper. The addition of anchovy paste and fresh thyme adds a deep, savory umami flavor that ties the dish together. It is an impressive yet manageable meal for weekend dinners or special gatherings, offering tender fish and plump shellfish in every spoonful. Serve with crusty bread to soak up the delicious sauce.

Directions

  1. Soak clams or mussels in a large pot of cold water mixed with corn starch to remove grit.
  2. Drain the clams or mussels several times in cold water until the water runs clear.
  3. Clean and cut lobsters or crabs into pieces, cracking shells as needed for serving.
  4. Heat olive oil in a large pot over medium heat.
  5. Add 2 cloves of minced garlic, chopped onions, green onions, celery, bell pepper, thyme, bay leaf, fresh tomatoes, canned plum tomatoes, wine, fennel seed, saffron, parsley, salt, and pepper.
  6. Cook the vegetable mixture for 5 minutes, stirring occasionally.
  7. Add the cleaned shrimp and red snapper pieces to the pot.
  8. Cover the pot and cook for 5 minutes, stirring once halfway through.
  9. Mash the remaining clove of garlic with anchovy paste and stir this mixture into the stew.
  10. Add the cleaned clams, mussels, lobster, and crab pieces to the pot.
  11. Cook for an additional 5 minutes until the shellfish have opened and the fish is opaque and cooked through.
  12. Ladle into bowls and serve immediately with crusty bread.
