Ingredients

Directions

  1. Peel and devein the shrimp. Butterfly them by making a shallow lengthwise cut along the back, cutting almost all the way through so they open like a book but remain attached at the tail.
  2. Finely zest the lemons and limes. Dice the jalapeño pepper.
  3. In a small saucepan, combine the lemon and lime juices with the brown sugar. Simmer over medium heat until reduced to about 3 tablespoons of syrupy liquid.
  4. Remove the saucepan from heat. Stir in the coarse salt, lemon/lime zest, diced jalapeño, and crushed white peppercorns. Let the mixture cool slightly, then stir in 1 tablespoon of olive oil.
  5. Heat a large skillet over medium-high heat. Add a little olive oil if needed. Press the citrus-spice mixture onto both sides of the butterflied shrimp.
  6. Sear the crusted shrimp in the skillet for about 1 minute per side, until golden and cooked through.
  7. Add the sliced ginger and starfruit to the pan. Pour in the rum, swirling the pan for a few seconds to deglaze and create a final glaze.
  8. Serve immediately, garnished with the starfruit and ginger slices.
