Description

This Cocoa Cola Cake is a nostalgic treat that transforms simple pantry staples into a decadent dessert. The secret lies in the hot cola poured over the dry ingredients, which tenderizes the crumb and infuses it with deep, caramel-like notes. The addition of miniature marshmallows ensures an incredibly moist texture, while the cocoa provides a subtle chocolate undertone. Topped with a homemade frosting studded with chopped nuts, this cake offers a perfect balance of sweetness and crunch. It is an ideal centerpiece for family gatherings, potlucks, or casual weekend baking. The unique flavor profile makes it a conversation starter, appealing to both children and adults. Serve it warm for the best experience, allowing the frosting to melt slightly into the cake. This recipe is forgiving and fun, making it a wonderful project for home bakers looking to impress without complex techniques.

Ingredients

Directions

  1. Preheat oven to 350°F (175°C). Grease and flour a 13x9 inch baking pan.
  2. In a large mixing bowl, combine the flour and sugar.
  3. In a saucepan, melt 1 cup of margarine. Add 2 tsp unsweetened cocoa and 1 cup of cola. Heat over medium heat until boiling, then remove from heat and cool slightly.
  4. Pour the hot cola mixture over the flour and sugar mixture. Stir until well blended.
  5. Add buttermilk, beaten eggs, and baking soda. Mix well until smooth.
  6. Fold in the miniature marshmallows.
  7. Pour the batter into the prepared baking pan.
  8. Bake for 40 minutes, or until a toothpick inserted in the center comes out clean.
  9. While the cake is baking, prepare the frosting. In a small saucepan, combine 2 Tbsp margarine, 2 Tbsp unsweetened cocoa, and 8 Tbsp cola.
  10. Heat the frosting mixture to a boil, then remove from heat.
  11. Stir in powdered sugar until smooth and well combined.
  12. Stir in chopped nuts.
  13. Spread the frosting over the cake while it is still hot.

Note

Do not use diet cola, as the lack of sugar affects the texture and flavor of the cake.

Buttermilk can be substituted with milk mixed with 1 tablespoon of lemon juice or vinegar, let stand for 5 minutes.

Store leftovers covered at room temperature for up to 2 days, or in the refrigerator for up to 5 days.
