Description

This Coffee-Walnut Toffee is a decadent treat that balances the deep bitterness of espresso powder with the sweet warmth of molasses and brown sugar. The base cooks to a soft, fudgy consistency rather than a hard snap, creating a luxurious texture that melts in your mouth. Toasted walnuts provide a satisfying crunch, while a swirl of bittersweet chocolate adds visual appeal and extra richness. Its perfect for holiday gift boxes, cookie trays, or as a sophisticated after-dinner dessert served with a cup of tea. Simple ingredients come together to create a sophisticated flavor profile that feels homemade and comforting.

Ingredients

Directions

  1. Butter a small cookie sheet or line it with parchment paper.
  2. Melt the butter in a heavy 2-1/2 quart saucepan over low heat.
  3. Add the white sugar, brown sugar, water, molasses, espresso powder, cinnamon, and salt; stir until the sugar dissolves.
  4. Attach a clip-on candy thermometer to the pan.
  5. Increase the heat to medium.
  6. Cook the mixture, stirring slowly but constantly and scraping the bottom of the pan with a wooden spatula, until the thermometer registers 290 degrees F (143C), about 20 minutes.
  7. Remove the pan from the heat.
  8. Immediately mix in 1-1/2 cups of the chopped walnuts.
  9. Pour the mixture onto the prepared sheet; do not scrape the pan.
  10. Tilt the sheet so that the toffee spreads to an even 1/4-inch thickness.
  11. Sprinkle the bittersweet chocolate by generous tablespoons atop the hot toffee.
  12. Let the chocolate stand for 1 minute to begin melting.
  13. Using the back of a spoon, swirl the chocolate to spread it slightly.
  14. Shake the sheet gently to form an even chocolate layer.
  15. Using the tip of a knife, swirl the chocolate to create a marble pattern.
  16. Sprinkle with the remaining 1/2 cup of walnuts.
  17. Refrigerate until the toffee is firm, about 1 hour.
  18. Break the toffee into pieces.
  19. Serve cold or at room temperature. Can be stored in an airtight container for up to 2 weeks.
