Description

This hearty Cohasset Seafood Chowder captures the essence of a classic New England coastline meal. Thick-cut bacon renders down to provide a smoky, savory base that infuses every spoonful. The broth is enriched with milk and thickened naturally by mashing a portion of the white potatoes directly in the pot, creating a luxurious, velvety texture without heavy creams or flours. Sweet chopped clams and flaky cod fillets add layers of delicate ocean flavor, while fresh thyme and aromatic celery provide earthy notes. It is the perfect comforting bowl for a chilly autumn evening or a satisfying weekend lunch. Simple ingredients come together to create a dish that feels both elegant and deeply home-cooked.

Ingredients

Directions

  1. Coarsely chop 1 medium onion, 1 large celery stalk, and peel 10 oz (about 2 medium) white potatoes, cutting them into 1/2-inch cubes.
  2. Drain 2 (6 1/2-oz) cans of chopped clams, reserving the juices. Cut 6 oz of cod or orange roughy fillets into 1-inch pieces.
  3. Saute the thick-cut bacon in a heavy medium saucepan over medium heat until brown and crisp.
  4. Using a slotted spoon, transfer the bacon to paper towels to drain.
  5. Pour off all but 1 tablespoon of the bacon drippings from the pan.
  6. Reduce heat to medium-low. Add the chopped onion, celery, and 1 teaspoon of dried thyme. Saute until the vegetables are just tender, about 5 minutes.
  7. Add the cubed potatoes and the reserved clam juices to the pan.
  8. Cover and simmer until the potatoes are tender, about 10 minutes.
  9. Using a fork, work directly in the saucepan to thoroughly mash about 1/4 of the potatoes into the soup to thicken it.
  10. Add 2 cups of milk and bring the mixture to a gentle simmer.
  11. Add the clams and cod pieces to the chowder. Simmer until the cod is cooked through and opaque, about 4 minutes.
  12. Season the chowder to taste with salt and pepper.
  13. Ladle the hot chowder into bowls, sprinkle with the reserved crispy bacon, and serve immediately.
