  1. Combine the beets, water, onion and salt in a saucepan.
  2. Bring to a boil and cook over low heat 1 hour.
  3. Add sugar and lemon juice.
  4. Cook 10 minutes and taste to correct seasoning.
  5. Beat the eggs in a bowl.
  6. Gradually add the soup, stirring steadily to p boiled potatoes.
  7. Garnish with sour cream.
