  1. Cook the noodles in a large pot of boiling unsalted water until just tender but still firm. Drain immediately and rinse thoroughly under cold running water until completely cool. Drain well and toss with 2 Tbsp of dark sesame oil to prevent sticking.
  2. In a blender or food processor, combine peanut butter, tahini, light soy sauce, dark soy sauce, 1/2 cup dark sesame oil, sherry, rice wine vinegar, honey, minced garlic, minced ginger, and hot pepper oil. Blend until smooth. Gradually add hot water while blending until the sauce reaches the consistency of heavy cream.
  3. Prepare the garnishes: Peel the carrot into thin 4-inch shavings and place them in ice water for 30 minutes to curl. Julienne the cucumber and slice the green onions.
  4. Just before serving, toss the cooled noodles with the peanut-sesame sauce until evenly coated. Transfer to a serving bowl and top with the cucumber, carrot curls, chopped peanuts, and sliced green onions. Serve at room temperature.
