Description

This interactive Oriental hot pot brings the warmth of communal dining to your table. Diners cook their own selections of thinly sliced beef, chicken, shrimp, and fresh vegetables in a simmering ginger-infused chicken broth. The key to success lies in slicing the meat paper-thin for quick cooking and keeping the broth at a gentle bubble. It is an ideal centerpiece for festive gatherings, New Year's Eve, or cozy winter dinners. The dish allows everyone to customize their meal, dipping cooked ingredients into zesty sauces like peanut, red chili, or ginger soy for added flavor.

Ingredients

Directions

  1. Slice 1/2 lb beef sirloin and 2 skinned chicken breasts very thinly across the grain for quick cooking.
  2. Prepare vegetables by halving 1 1/2 cups fresh mushrooms, cubing 1 cup eggplant, and coarsely cubing 1/2 head of Chinese cabbage or lettuce heart.
  3. Devein and peel 1 pound of raw shrimp; rinse 4 cups of small spinach leaves and remove stems.
  4. In an electric skillet or chafing dish, combine 14 oz (5 1/4 cups) chicken broth with 3 chicken bouillon cubes.
  5. Add 1/2 teaspoon ground ginger (or grated gingerroot) and 1/2 teaspoon monosodium glutamate to the broth.
  6. Heat the broth over medium heat until it reaches a gentle simmer; adjust heat to maintain a bare bubble.
  7. Arrange sliced meats, shrimp, mushrooms, eggplant, cabbage, and spinach on platters for guests to select.
  8. Set out individual bowls of hot cooked rice and small dishes of dipping sauces (peanut, red sauce, Chinese mustard, or ginger soy).
  9. Provide guests with chopsticks or bamboo tongs to pick up raw ingredients and cook them in the simmering broth.
  10. Instruct guests to cook items for a few minutes until tender, then remove and dip into sauces before eating.
  11. Optionally, poach eggs in the flavored broth towards the end of the meal for a rich finish.
  12. Serve the remaining broth as a soup course after all solid ingredients have been consumed.
