Ingredients

Directions

  1. Cut the chicken into serving pieces. Wash the chicken and pat it dry with paper towels.
  2. In a plastic bag, combine 4 tablespoons flour, 2 teaspoons salt, and 1/2 teaspoon pepper.
  3. Place the chicken pieces in the bag and shake to coat them evenly with the flour mixture.
  4. Melt 6 tablespoons butter or margarine in a skillet over medium heat.
  5. Lightly brown the coated chicken pieces on all sides in the skillet.
  6. Transfer the browned chicken pieces to a deep, 3-quart microwave-safe casserole dish.
  7. In the same skillet, lightly brown 12 small peeled white onions. Set the onions aside.
  8. Remove the skillet from heat. Carefully pour 4 tablespoons brandy into the hot skillet, scraping up any browned bits from the bottom.
  9. Pour the brandy mixture into the casserole with the chicken.
  10. Add 1 peeled garlic clove, 1 bay leaf, 1 stalk of celery cut into 4 pieces, the browned onions, and 3 cups red wine to the casserole.
  11. Cover the casserole and microwave on high for 12 minutes, stirring occasionally. Arrange the meatiest parts of the chicken toward the outside for even cooking.
  12. Add 1/2 lb thinly sliced fresh mushrooms. Microwave uncovered for an additional 4 minutes, or until the chicken and onions are tender.
  13. Remove and discard the garlic clove, bay leaf, and celery pieces.
  14. If the sauce is too thin, mix a little flour with cold water to create a slurry and stir it into the sauce.
  15. Microwave uncovered for an extra 1 to 2 minutes if you added the flour mixture to thicken the sauce.
