Description

This Corn Meat Loaf is a comforting twist on a classic family favorite, blending lean ground round with fresh corn kernels for a naturally sweet and tender texture. The loaf is packed with aromatic flavors from sautéed onions, celery, garlic, and a blend of dried basil and oregano, while a splash of cider vinegar adds a bright, tangy note that cuts through the richness. Topped with a simple tomato sauce glaze, it bakes to a golden brown perfection. It’s an excellent choice for weeknight dinners, potlucks, or any occasion where you want a hearty, satisfying main dish that feels homemade and wholesome. Serve it with roasted potatoes or a crisp green salad for a complete meal.

Ingredients

Directions

  1. Preheat the oven to 350°F (175°C). Lightly coat a broiler pan or loaf pan with vegetable oil or cooking spray.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chopped onion and diced celery; sauté for about 5 minutes until tender and lightly browned.
  3. Add the dried basil, dried oregano, salt, celery salt, pepper, and crushed garlic to the skillet. Cook for 2 minutes, stirring frequently, until fragrant.
  4. Remove the skillet from the heat and stir in the cider vinegar. Allow the mixture to cool slightly.
  5. In a large mixing bowl, combine the cooled onion mixture, ground round, dry breadcrumbs, 1/2 cup of the fresh corn kernels, and chopped fresh parsley.
  6. Place the remaining 1 cup of fresh corn kernels and the egg in a food processor. Process until almost smooth, creating a corn purée.
  7. Add the corn purée to the meat mixture in the large bowl. Mix gently but thoroughly until just combined; the mixture will be moist.
  8. Shape the meat mixture into a 9x4 inch loaf and place it on the prepared broiler pan.
  9. Bake in the preheated oven for 30 minutes.
  10. Remove the loaf from the oven and brush the top evenly with the tomato sauce.
  11. Return the loaf to the oven and bake for an additional 35 minutes, or until the internal temperature reaches 160°F (71°C).
  12. Remove from the oven and let the meatloaf stand for 5 minutes before slicing and serving.
