  2. Cook the wild rice according to package instructions, then drain well.
  3. While the rice cooks, chop the giblets from the hen into small pieces.
  4. In a skillet, melt 2 tablespoons of chicken fat over medium heat.
  5. Add the chopped giblets, minced onion, and chopped mushrooms to the skillet.
  6. Sauté the mixture for about 10 minutes until the vegetables are softened and giblets are cooked through.
