cut into 1-inch pieces 2 1/2 tb Vegetable oil 2 tb Fresh lemon juice 1 1/2 ts Honey 1 1/2 ts Dijon mustard 1/2 ts Grated lemon

peel 3 c Mixed lettuces or mesclun 1/4 c Thinly sliced sweet onion -(such as Vidalia) or red -onion

Place cornmeal in large bowl.

Season with salt and pepper.

Pinse catfish under cold water and shake off excess (do not pat dry).

Toss fish in cornmeal mixture until well coated.

Heat 2 T oil in large nonstick skillet over medium-high heat.

Add catfish and cook until golden brown and cooked through, turning occasionally, about 6 minutes.

Transfer to paper towels and drain.

Add 1/2 T oil, lemon juice, honey, mustard and lemon

peel to skillet and

whisk until combined, about 30 seconds.

Remove from heat.

Combine lettuces and onion in bowl.
