Description

This elegant Cranberry Apple Tarte Tatin combines the comforting warmth of spiced apples with the bright acidity of fresh cranberries. The apples are slowly caramelized in butter and sugar before being topped with buttery pate sucree. As it bakes, the pastry puffs up and turns golden, while the fruit beneath becomes tender and jammy. The inversion reveals a glossy, amber-colored glaze that pools beautifully around the edges. It is an impressive yet approachable dessert perfect for holiday gatherings or weekend brunches. Serve it warm with a dollop of cream or vanilla ice cream for a luxurious finish that balances sweet and tart flavors.

Ingredients

Directions

  1. Preheat your oven to 400&# 194;°F (200ðC).
  2. Peel, core, and slice the apples into wedges, then toss them with the juice of one lemon to prevent browning.
  3. In a 10-inch ovenproof skillet, melt 4 tablespoons of butter with 3/4 cup of sugar and 1/4 teaspoon of lemon juice over medium heat.
  4. Stir the mixture until it melts into a light caramel color, being careful not to burn it as it will darken further in the oven.
  5. Remove the skillet from the heat and arrange the apple slices tightly in a single layer, rounded side down, covering the bottom of the pan.
  6. Scatter fresh cranberries evenly among the apple slices.
  7. Roll out the pate sucree on a lightly floured surface to a 12-inch circle.
  8. Carefully drape the pastry over the skillet, trimming any excess so it overhangs by about 1/2 inch.
  9. Tuck the overhanging pastry edges down between the apples and the side of the skillet.
  10. Brush the top of the pastry lightly with cold water and sprinkle with 1 tablespoon of sugar.
  11. Bake for 40 minutes, or until the pastry is golden brown and the fruit is bubbling.
  12. Remove from the oven and let the tart cool in the skillet for 5 minutes to allow the caramel to set slightly.
  13. Place a serving plate over the skillet and, using oven mitts, carefully invert the tart onto the plate.
  14. Serve warm, spooning any remaining caramel from the skillet over the top.
