Description

This elegant Cranberry Coupe Melba transforms simple peaches into a sophisticated dessert. Poaching fresh peaches in a light vanilla syrup keeps them tender and juicy, while the vibrant cranberry puree adds a necessary tart contrast to the sweet fruit. The addition of a splash of kirsch elevates the flavor profile, providing a subtle almond-like warmth that complements the berries beautifully. Served with a generous scoop of vanilla ice cream, the textures play off each other perfectly: the soft fruit, the creamy ice cream, and the slightly textured sauce. It is an impressive yet manageable dish perfect for dinner parties or romantic evenings. The balance of sweet and tart makes it refreshing rather than heavy, leaving your guests wanting more.

Ingredients

Directions

  1. Blanch peaches in boiling water for 30 seconds to loosen skins.
  2. Immediately rinse peaches with cold running water and drain well.
  3. Peel the peaches, cut them in half, and remove the pits.
  4. In a medium saucepan, combine 2 cups water, sugar, and vanilla; bring to a boil.
  5. Boil for 5 minutes, stirring occasionally, until the sugar is completely dissolved.
  6. Add the peach halves to the syrup and poach until tender but still firm, about 10 minutes.
  7. Remove peaches with a slotted spoon to a bowl, reserving the syrup.
  8. Refrigerate the peaches until cold, about 1 hour.
  9. Add the cranberries to the reserved peach syrup in the saucepan.
  10. Heat the mixture to a boil, then reduce heat and simmer for 10 minutes.
  11. Puree the cranberry mixture in a food processor or blender until smooth.
  12. Stir the kirsch into the cranberry puree.
  13. Cover and refrigerate the cranberry sauce until cold, about 1 hour.
  14. To serve, stand two peach halves upright in each of 6 stemmed glasses.
  15. Place a scoop of vanilla ice cream between the peach halves.
  16. Spoon the cold cranberry puree over the ice cream and peaches.
